Don’t Starve Because You Don’t Have: Budget dishes to save you from Salary hitches

It’s a week after payday and you’re yet to receive any alert, you can feel your order lunch days diminishing to bukka food soon to be Garri and groundnut budget, do not fear! Here an easy lunch day hack to take you through another week. On a budget. Of course.
Coconut Rice and Chicken 
Ingredients  (Serve 5-7 Portions)
• 2 bulbs of Onions;
-Chopped
• 1 Tbsp Coconut seasoning
• Tomato mixture;
-1 tin plum tomato
– 5 scottish bonnet/ata rodo
– 4 Tatashe or red bell pepper
– 1 bulb onions
-1 clove garlic
– 1 satches peppe and onion paste
• Seasoning Cubes (6-8)
•1 tin coconut milk
• 2 Cups Chicken stock;
-Onions
-Seasoning cubes
-Curry
-Thyme
-Garlic
-Ginger
– Dried mixed herbs
-Chicken seasoning
• 1 Derica Rice
• 75cl Water (1&1/2 sachet water)
•1 Cup Dry fish
-washed with salt
• 1 Cup Scent leaf/ Nchanwu
-chopped
-Washed with salt
-Drained
I Kilo Chicken. (5-10 pieces)
Instructions:
-Chicken
• In a meduim pot season Chicken with 1 bulb onions, 2 Seasoning cubes, 1Tbsp Curry, 1/2 Tbsp Thyme, 1 Tbsp minced Garlic/Garlic powder, 1/2 Tbsp minced Ginger/Ginger Powder, 1 Tsp Dried mixed herbs, 1 Tbsp Chicken seasoning,
• Set to boil on meduim heat (The Chicken has water so be careful to put little or no water till to avoid losing your stock)
• Allow to boil for 5mins tops (To get out stock)
• Drain Stock and set aside
• Put 1/2-1 Cup of oil in a frying pan and fry Chicken till it is crispy brown
-Coconut Rice
• Soak raw rice in hot water about 5-10 mins
•Pour oil in a hot clean pot
•Add onions
•Season with coconut seasoning powder
•Allow to simmer for 30sec-1minute
•Add tomato mixture
•Simmer 5-10minutes till tomato dries and oil is visible
•Add season cubes
• Turn off gas
• Add coconut milk
• Wash & Drain Rice
• Add the washed and drained rice
• Add Chicken stock
• Add water
•Stir, Taste to make sure its to your liking
•You can top up your seasoning if needed
• Cover and allow cook on meduim heat for 30-45mins
• Check the texture of rice to make sure its soft
• Add the dry fish and scent leave
•Cover to cook for 5mins.
•Stir and Serve in Take away packs for work for the week, Store in Fridge or freezer (depending on your light consistency)
